Chablis
Maison Simonnet-Febvre produces and vinifies grapes from the four "Appellation d'Origine Contrôlée" abbreviated either as AOC or AC: Petit-Chablis, Chablis, Chablis Premier Cru and Chablis Grand Cru. The vineyards of Chablis are world-renowned for their white wines of fresh, mineraly almost steely bouquet, with an ample, generous and zesty fruit palate. The vineyards are exclusively planted with the Chardonnay varietal, on unique limestone soils, rich in marine fossil deposits from the Jurasic era.
PETIT CHABLIS
The vineyards are often on the top of the hills, overlooking the illustrious vines of Chablis and Chablis Premier Cru. Petit Chablis are elegant and fruity wines, with a lively acidity and good minerality.
CHABLIS
Chablis is the biggest appellation spread over 19 communes around the village of Chablis.
Chablis wines have a remarkably bright, gold-green hue, lively fruit aromas and a firm steely structure that allows the wines to age.
CHABLIS PREMIER CRU
The Premier Cru vineyards have a particularly high content of Kimmeridgian era fossilized oysters, and consistently make some of the best wines from Chablis. This appellation comprises 40 different specific vineyard areas (named plots of vine-growing land), that make up the 17 main Chablis Premier Cru "Climats" that can be found on both banks of the Serein river.
Maison Simonnet-Febvre vinifies and bottles 5 different Chablis Premiers Crus.
CHABLIS GRAND CRU
These are the very best vineyards located in the heart of the appellation, orientated towards the south-west. There are 7 "Climats" classified as Chablis Grand Cru. Maison Simonnet-Febvre vinifies and bottles 3 Grands Crus, all aged in oak barrels.
